Source: New England brewery producing highly sought after American-style IPAs. Accentuates the ridiculous flavors and aromas of IPAs that use tropical, fruit-forward hop varieties. Pronounced peach character and subtle autumnal spice character when used in beers with restrained hops. One of the few domesticated yeast strains not widely distributed by large-scale commercial yeast producers.

Many of these cultures have been used for generations to make some of the most consistently wonderful beverages in the world. Whether it’s brewer’s yeast, Brettanomyces, or Lactobacillus…these aren’t Local Yeast by our definition, but certainly were local at one time.
