I’m surprised nobody else has commented yet! This yeast delivers as advertised. I did a 70/20/10 grist of Bo pils, vienna, and white wheat. Single infusion mash at 148F, bittered to 30 IBU, added a light touch of Mittelfrueh at 15 and 5, and fermented at 72-73F. Basically what the great people at BB recommended. The fermentation took off within hours and developed a healthy krausen. It held like that for another day and then slowly started to fall. It held a thin veil of bubbles on the top for a few more days and kept a slow steady bubble for a few more. I left it to sit for a couple more weeks and noticed that it might have picked up and fermented a little further right around 2 weeks. I couldn’t confirm with gravity readings, but it might be a good idea to give this one some time if you’re not sure it’s done. Ultimately, it took the beer from 1.056 to 1.007 so no problems with the attenuation at all. The flavor…well worth any wait. Just as advertised. Sweet fruit with a very interesting lemon curd thing going on and a subtle but complex spice profile. All this together gave the beer a very slight almost cake-y vibe. In the best of ways. It still had a medium-full mouthfeel with a nice dry finish that made it very, very drinkable. I kegged some at 3 volumes and then bottle conditioned some in both brown and green bottles at 3.3 volumes. The extra spritz in the bottles definitely enhanced the beer in my opinion. Both were good but a nice spritzy carb really matched this beer. I will also say that the musty, skunky lightstrike character also matched this beer well. It added to the complexity and really matched well with some of the background earthy and spicy character. Please bring this one back as a seasonal!
